Job Description — Baker

Job title: Baker (Junior / Baker / Senior Baker / Head Baker as applicable) Reporting to: Head Baker (Junior and Baker); Director (Senior Baker and Head Baker) Working with: Baking team, operations team, delivery drivers


The role

The Baker is responsible for producing Wild Hearth Bakery's full range of baked goods to the correct specification, in the quantities required, and to the standards of quality and food safety the Company expects. The role involves early-morning starts and physical work in a hot, flour-dusty environment.


Core duties

Baking and production

  • Prepare and bake bread, pastries, and other bakery products according to established recipes and daily production schedules
  • Scale and mix ingredients accurately; maintain consistency of product across all batches
  • Operate baking equipment (deck ovens, proving cabinets, mixers, slicers) safely and correctly
  • Monitor fermentation, proofing, and bake times; adjust to conditions (temperature, humidity) as needed
  • Finish and present products to the required standard before handover to packing

Quality and food safety

  • Follow all food safety, allergen, and hygiene standards at all times
  • Complete temperature logs, production records, and any other required documentation accurately
  • Report any quality concerns, ingredient issues, or equipment faults to the head baker immediately
  • Maintain a clean and hygienic workspace throughout the shift and leave it ready for the next team

Stock and materials

  • Monitor flour, ingredient, and packaging stock levels; flag low supplies to the operations team
  • Take deliveries of flour and other ingredients into the stores and ensure correct storage
  • Assist with stock rotation and date-checking

Senior Baker / Head Baker — additional responsibilities

  • Oversee production scheduling and allocate tasks across the baking team
  • Train and support junior bakers and new starters
  • Lead quality checks and sign off on production before despatch
  • Liaise with operations and delivery teams on order volumes and any changes
  • Contribute to recipe development and product improvements

General responsibilities

  • Clock in and out accurately for every shift using BrightHR
  • Work safely: wear appropriate PPE, follow manual handling guidance, report hazards immediately
  • Work cooperatively and respectfully with all colleagues
  • Participate in team meetings and relevant training as required

Additional tasks (when requested)

  • Assisting with packing or despatch during busy periods
  • Deep cleaning of baking equipment on scheduled maintenance days
  • Participating in special events (pizza nights, markets, etc.)
